| In a large sauce pan heat the 2 tbsp. of olive oil. When the oil is hot add the chopped onion and minced garlic. Fry the onion and garlic until golden brown. Add 6 cups of water to the pan. When the water begins to boil add the salt and begin to pour in the corn meal. Continually stir until the mixture becomes thick. Once the polenta is thick it is ready to serve. Place the polenta in bowls or a large plate. The polenta can be eaten as is or you can serve it with your favorite sauce. |
